Dated, but still useful.
If only I could find more books like this, but published since 2010. The majority of the chapters are on garlic (21 out of 32), and you may be able to make out some of the chapter names from the photo I've attached. This is hard science, it's not written for the lay public by some MD out to make a buck. Paul Lachance isn't the author, he's the editor: each chapter is contributed by different authors, as is the norm for this type of academic publication. The chapter I found as still relevant just this week is "Dietary Tolerance / Absorption / Metabolism of Phytochemicals in Garlic."What a great collection of papers.
