What is the organic certifying body of Jovial Foods? Thank you

Just like ANYTHING else organic is "how" it is grown. The main question that SHOULD be WHAT is grown. This is wheat that has not been genetically modified. There used to be a song sung about amber waves of grain, well they are not anymore because the wheat has been genetically modified and is maybe mid-shin high! Jovial however is the way it was back I that day and therefore is a much healthier food.

Has anyone tried this flour in the no-knead bread recipe?

Yes, we used it once in Lahey's no knead loaf and will again. I use it constantly in Volkornbrot, either the Einkorn flour or even better, the berries, which I mill myself. Either way it is great.

What is the difference between all purpose vs whole wheat? Does all purpose contaim gluten?

The whole wheat flour retains all bran and germ. Jovial all purpose flour has 20% of the bran and germ removed from the whole wheat flour. Einkorn is wheat and does contain gluten. However the gluten is very weak so those with gluten intolerances often can eat einkorn without negative consequences. Those with Celiac should NOT eat einkorn.
