how do you control both humidity and temp with same source?

Place both the humidity probe and temperature probe at the source. The work 1 socket is for heating/ cooling, in the setting, it can only select heating or cooling. The work 2 socket is for humidifier/ dehumidifier, it will control the device according to humidity sensor and setting. For example, if you want to maintain 30-40 degrees for heater, 50%-55% for humidifier. Please set: HC=H TS=40 DS=10 HD=H HS=55 DS=5 Others are default. When temperature reaches/ below 30 (TS-DS), it will turn on the heater, turn off at 40 (TS) degrees. When humidity reached 50%/ below (HS-DS), it will turn on the humidifier, turn off at 55% (HS). Please note that all the heaters/coolers or humidifiers/dehumidifiers cannot exceed 1800W.

Earnest is correct, when curing meat you must maintain humidity using a humidifier/dehumidifier in conjunction. There’s a awesome video on YouTube of a business who makes cured meat, reviewing the Inkbird 308. He then created another showing exactly how to setup a cooler using the Inkbird ITC-308 Temperature and IHC-200 Humidity Controllers. He uses Eva-Dry products for humidity.

Nope. If you're in dual humidistat + temperature mode, one outlet will be for heating/cooling, the other will be for humidity control. You cannot set it so that one outlet will turn on when either temperature OR humidity reaches the threshold.
