Q: What size are the holes on the "Course" disc? I'd like to try this for making Spaetzle, but the ideal size hole would have to be 1/4 inch.

it looks like 1/4 '' to me, i think it would work fine .Better than the drilled coffee can i once tried lol

Says China right on the box. This is not a cheaply made item. I am very happy with it.

Q: I make a cauliflower pizza crust and need a tool to squeese the water out of cauliflower, will this work?

I'm sure it would squeeze out the water. However, if the cauliflower is cooked, you won't get rice-shaped pieces. It would most likely be a paste.
