Can you remove the bolt completely so you can put a wood screw through the hole and attach it to a wall?

the housing is glued to the magnet and may be damaged when you try to remove the housing. I did not try this. The screw will come off the housing without a problem.

Can you swap out the mounting bolt with a long peice of all thread?

Can these hold a small light bar on a car for a temp hold and will they hold driving on local or highway speeds

If you are mounting a light bar on the roof of your vehicle it is quite likely blow off at highway speeds. This also would depend on how many you would use. Paint also reduces force.
