Q: My induction cooktop keeps turning off unexpectedly. Do I have a defective unit?

Mine has worked great for me. However, I never run it much past 800 watts. Thinking of a couple things to check before assuming unit is defective. Make sure the pan is fully inductive compatible. Also, check the power source is up to voltage and has plenty of power. Recommend not sharing a 15W circuit with any other big power users.

Q: Do I need to use special cookware or any metal will do?

It depends on whether the bottom of your cookware is magnetic. You can use the magnet in the package to test the bottom of your cookware. It does the job if the magnet sticks.At the same time, you need to make sure the bottom is flat enough.To be specific, most carbon steel, cast iron and stainless steel are compatible. If you use an alluminum cookware,you'll need to test the bottom.Alluminum is not magnetic.But some alluminum cookwares have a magnetic bottom to be compatible with induction whiles others do not. Hope my cooking experience helps.

Q: Why is this unit more expensive than others same models?

First of all, it is NSF certified,which is very important for commercial use.I did not purchase it for commercial use,but I think a commercial grade one is more reliable.18/10 stainless steel and a glass furface from Schott Ceran are extra bonus. I have had it for a year and so far I think it is a good deal

Q: Can it automatically maintain a gallon of cooking oil at 350 degrees? Does temperature have a fast recovery when you put in a batch of food?

It does maintain a consistent temperature. I’ve had it for a year or so and I’m still learning how to use it. I do love it more than the cheaper models which electrically burnt out.
