What size do I buy for a UK shoe size 5?

I take shoe size 10.5 and large is a roomy fit on me.

Yes, but only just. Please note, this item is not waterproof (not neoprene), and the sole strap will only work well if your show has a separate heel/sole (ie. A gap for the strap). I have adidas Terrex fast r gtx and this item works quite well with them.

What size would be best for a shoe size 6/7?

The medium size would be the ones to go for as you will have more room for adjustment. The small size are for smaller shoe sizes
