Great thermistor
The resistance will go from around 40k Ohms at - 5°C, to around 10k Ohms at room temp, down to around 5k Ohms at 40°C.You can search for equations that do a good job of approximating the resistance at different temperatures, something like 1/T = 1/T0 + (1/B)ln(R/R0). I'm using a 5k Ohm fixed resistor in series with the thermistor & an arduino that delivers 5V from one of the digital outputs. If you average 30,000 analogRead's then you can easily achieve 0.01°C accuracy. I've measured 40l of water over many hours & I trust this thermistor.

Works with 3D Printer
Took a punt on this to use with my 3D printer to measure the chamber / enclosure temperature, seems to be working fine after figuring out what settings to use. In Klipper I used the settings below, was a little trial and error as my SKR 3 board apparently has a 4.7k resistor and this has 10k? For whatever reason using a value of 47000 gave me results that looked sensible.sensor_type: Generic 3950pullup_resistor: 47000
