Will it only work if there is line of sight between my smartphone and the charger unit?

It will still work even if it's not line of sight. Depending on your surroundings, your Bluetooth range may vary, but if you have a second smartphone (or tablet) you can use MEATER Link to send the cook data to your WiFi network, and monitor the cook with any number of additional devices on the same network. If you register for MEATER Cloud, you can monitor the cook anywhere your second device has internet connectivity.

will it work inside a cast iron esse ironheart?

We use ours in a stainless steel BBQ and that works ok but not sure for cast iron.

Can more than one probe connect to the base unit? If so, how will they show up on the app - how do you tell which probe is which on the app?
