The food would not be in contact long enough to absorb anything. **Q: Does this really do a good job of sealing? I want to try to using it for filled appetizers.** A: Yes it does, Puree your filling to a smooth consistency; don't over fill the dough, (1 single Pie crust with 3/4 -1 cup of filling). I've used different dough: Puff Pastry, Crescent Roll dough, Pie Crust, Periogi and Samosa doughs. Baked, Boiled or Fried. **Q: what would be my advantage to purchase this over one made of wood?** A: I am not sure if a wooden roller would work better or not. We are still having trouble asking our roller seal the ravioli. We have tried different fillings and different pasta recipes with not much lunch. Even with pressing down very hard as you roll most of the ravioli don't seal. I would recommend this product. It makes puffy pillows and cuts them out with no trouble. Just roll out the dough to the size you want, spread the ingredients over half of the dough, on the other half brush beaten egg or water to seal and fold over the filling, pat out any air bubbles and roll!
