I wouldn't use anything made of fiberglass anywhere near a cooking area or food. All fiberglass blankets shed fiberglass particles and the last thing you want to do is either inhale fiberglass particles or eat them. Once a fiberglass particle enters a human body (lungs) it stays there forever. You don't want it in your lungs. Look up 'Asbestosis'. There's a very good reason that fiberglass is now banned from use in construction. I'd consider silicone if I were you.

what does this fabric do if red hot metal drops on it? Does it smoke or smolder?

It can't burn; it's fiberglas. Could possibly melt if enough metal lands on it, but doubtful.

Would this work to sit a Fire Table on? I need a heat resistant barrier, but no flames would be near it.

I'm not sure what a fire table is but I use it under a wood burning stove in my tent to prevent sparks from damaging the floor and it works for that. Hope that helps.

Could this blanket muffle the sounds of our electric water heater?

It might to some extent but would be very bulky and heavy really. I think you would be far better served getting an insulated water heater jacket for your heater. I'm assuming it is a gas heater with power vent as the only noise you should hear from a heater is the blower fan. In which case neither option will muffle the fan as it is on top of heater.
