The difference between the regular and French is the acid content. The French has less acid and will not curdle drinks with milk in them. There is a chance the regular could due to its higher acid content

I'm looking for a raspberry flavoring that is strong and a bit tart. I've tried Torani and their raspberry flavoring is not very tart.

This syrup has an excellent raspberry flavor but is sweet. You could always add some white vinegar to your beverage.
