If I wanted to use these for lobster catching is the Xuker ones better than the neoprene ones & 3mm has more flexibility right?

I dont know about lobster catching, but these are fairly flexible. I'm able to grip my different scrub brushes without a problem and I've used them to drive with no issues.

Would these work as a cold weather workouts such as running?

I think they're meant more to keep your hands warm in cases where they're going to get wet, like surfing or other waters sports, or even washing your car. That said, I don't see why they wouldn't provide some amount of warmth during a winter run, though more comfortable options probably exist.

What temperature range is relevant for 3mm gloves? Will it be suitable for 16-17 Celsius water temperature?

I would say that’s a matter of preference. I wear a 5mm hooded suit in 72F (22.2C) because I have little body fat. I do not wear boots or gloves though to better regulate heat. 60F (16C) sounds like not fun water. I’d probably use 5mm gloves but if you have more body fat to insulate you might be ok with 3mm gloves.
