what are the scoville ratings

I have no idea, but I do consider these chilis quite hot, and I like hot. I have a store locally that sells fresh Thai chilis, and these are much hotter, and consistently hotter. Definitely hotter than a serrano. I'm very pleased with them!

Can you ship overnight

not necessary, we ship using USPS priority mail. To most states, from California takes only 2 days.

Do they ship on ice? Won’t they go bad during shopping?

The ones I received were not shipped on ice. Them going bad has more to do with temperatures where you are, temperatures and humidity during shipping, season for the crop (are you getting them at the end of the growing season vs. In the beginning or middle of the season), and how long they are in transit. I got mine just a couple weeks ago, and there was minimal damage.

Are these Bird peppers?

These are prik chi faa which mean sky pointing pepper. Like most hot peppers they grow pointing upwards. The birds eye chili is prikeenoo. It actually means mose dropping chili because they are very small. Both are commonly used in Thailand.
