Makes excellent seitan!
I love how easy it is to make vegan meat substitute using this! I can put together a batch in just minutes, and the texture is great. If you've never made seitan before - be warned - it tastes terrible unless it's well flavoured by simmering in a stock or sauce.I make mine a bit differently to most cooks, by mixing equal amounts of the gluten flour with a diluted homemade barbecue sauce, kneading till it has a firm but not too rubbery texture, shape it into meatballs or steaks, pop it in an baking dish and pour more sauce on top, then cook at 200 for about 30 minutes. It can alternatively be flavoured by using stock instead of water to mix it then simmer in stock in a saucepan - but mine often turns out soggy done that way so I prefer the oven method to give a chewy "meat" with a bit of substance.
