1 piece - I use it for cold weather golf & it works great as a neck warmer alone, neck & ear warmer and then full with it covering your mouth & nose.

What is the feedback from cyclists who ride in the range of 40 to 45 km/hr (24 to 27 mph) when the temperature is 4C (40F) or below?

I've only used it climbing and skiing and it worked great, but will be using it for the same purpose your asking about within the next two weeks and I think it will work well

Will this hold moisture then freeze to my beard?

I have not noticed that this holds moisture. The only problem that I had was that today with a -14 windchill there was a little bit of condensation on my sunglasses other than that I did not notice any moisture being held in this fabric.
