Can you select white with these or just colours?

They are full RGB, so they can do white as well. I use mine on white and slightly dimmed and I'm very happy with them.

No. I asked this directly to them some time ago.

Will these work with a razer chroma addressable rgb controller?

Perhaps, I had a similar issuer with making mine work with Corsair controllers, in my case I found an adapter cable, perhaps the same can be done for Razor stuff too.
