Q: Shelf life? How long is the product good for once it has been opened please?

You need to refrigerate the product after opening. The product stayed fresh and flavorful in my fridge for over 6 months, am I am sure it would have lasted longer if I had used it more slowly.

Q: can you make a decent smoothie out of this? What would the syrup to water ratio be?

Not sure but I believe you can do smoothies. They have recipes on the bottle to try
