Is this bpa free? doesn’t say anywhere on the packaging.

It says BPA free plastic in the description.

Does the packaging say BPA on it?

The packaging does not indicate anything about BPA. It only says "food safe."

Are these really .25 inch thick?

Well....They are really a little over and eight of an inch and then there is an anti-slip grid on the back that adds some thickness, so maybe rounding up one might "reach" a quarter inch. BUT: They are well worth the money. I have had other cutting boards similar that were pretty flimsy and worthless. I have had these ones for several months and use them daily. I put them on the top shelf of my dishwasher and they come out just fine with no curling. And the surface seems resistant to cut marks. I split my set with a friend and she loves hers as well.

Color Coded - How do they indicate what mat is used to cut what. Where are the symbols?

There are no symbols you create the symbols on the mat for whatever you are using a particular mat for. These mats are all the same except for the different colors. I love them and I think they are great, I hope I answered your question?
