I ordered one and it came rolled up and compressed/flattened (obviously required for shipping). But will it relax and regain it's rounded shaped?

Yes it will. Roll it out and work it with your hands a little. If the seal is longer than needed trim off the extra but leave about 5 in extra just in case. To make it slide on easy put the seal in a bucket of water and dish soap. Have one person pulling it on and a 2nd person at the other end pulling it out of the bucket and feeding it (pushing) on the track. When it's in place trim off the extra. Overall pretty easy and you'll save about $75.00 doing it yourself.

Do you need to disconnect the door from the metal track? The Wheel and Rail are in the way getting it on and off?

I did not need to disconnect my garage door. I did, however, lowered and stopped the door to a position where I could feed the new seal more easily. Keep the new seal straight for a few inches prior as you slide the seal on. You need to lubricate the new seal and your door's track as you slide it in. Use an oil, WD40 or, preferably, silicone spray or at least soapy water. It took me about 20 minutes to push it and then grab it and slide it forward.

This says for 40-140 degrees. Does it mean it shrinks in colder weather??

I assume its just a typo in the listing as an illustration in the product literature posted on this site says -40 to 140.
