Great rise - delicious flavor - don't forget to add 1 tablespoon of gluten powder
I used this in my Zojirushi BB-CEC20 bread machine. The loaf rose really well, and the flavor was delicious. Keep in mind that unlike white bread flour rye flour does not have a lot of gluten. Gluten is the protein in wheat that allows bread to rise. As such, per recipe, I added one tablespoon of gluten powder to the rye loaf recipe.I've prepared loaves in the past without the addition of gluten. I was disappointed with the lack of bread rise. I add one tablespoon of gluten to any brown flour such as rye or whole wheat. I learned this trick at the local community college where I learned baking.

For good bread get this
Adding the vital wheat gluten will change your regular flour to a good bread flour. The results will be more chewiness, better taste, and sturdy, bigger air pockets in the baked bread. I think it makes it stay fresh a little longer as well. I have been using this product for 5+ years.

Good product for home baking.
I mill my own wheatberries for all my baking needs. I use this in making my breads and I feel like it really improves the results.

I used to make seitan for my vegetarian daughter using this
And I would make it again, but her long-time boyfriend got good at it and he is the cook in their family so...I learned another "trick" with this product and use it regularly. I used to always make bread from scratch and love home made bread, but I got a bread maker and LOVE using it! The thing I found with making bread in a bread machine is that the bread doesn't rise up quite like my own hand kneaded breads...until I read a suggestion that adding a tablespoon of vital wheat gluten to each cup of flour used will assist the bread to rise and be lighter in the finished product when I pull the loaf from my bread machine. I was blown away the first time I used vital wheat gluten as suggested in my machine made bread - it WORKS!!! Not just a little bit, it makes really nice loaves of bread that have good texture and are quite tooth-some (meaning easy to bite into and chew). Now, even with this product in my machine bread, they aren't the puffed full of air loaves of bread on every grocery store shelf - just want people to be aware, this vital wheat gluten works well to "lighten up" machine bread and that works for me! As soon as I open the package I do store it in the fridge to prolong the freshness of the product (and its flavor in my bread). For the size of the package and the price, this is a good deal for seitan or bread!

30% inflation since November of 2024
Seemed to work ok. that being said, they have raised the price on this 3 dollars since November of last year (2024). 30% inflation is utterly ridiculous, so I'll probably pick a different branch now.

Dealing with the company was good. Shipping and price was right, but I didn't use the product yet. I am not worried though

Simply add to your AP flour to make bread flour.
It's easy to turn AP flour into bread flour by adding 1½ teaspoons per cup after 1st removing 1½ teaspoons of flour from the cup first. That's all.

This product, which I bought the other days, is a product that raises the protein percentage of any weak flour....that is, if you make bread and need a strong flour which is sometimes very difficult to find, I mean a flour with more than 13% protein, and you cannot find it, then take this product into consideration since by using a small amount of it you will obtain a high level of protein and you will be able to make a good loaf of bread.Try it so you can see how efficient it is and does not alter the flavor of the bread at all.
