Q: Can this mount hold a projector?

Depends on the size and weight of it, but I wouldn’t recommend it.

Q: Does the stud unscrew to be able to screw a 1/4-20 into it to use a magic arm type mount?

As I understand your question, the stud is solidly attached to the backing/mounting plate. That has four holes, one on each corner for attaching to a flat surface. The assembly does not come apart.
