ultra sharp right out of the package!
I needed a super sharp knife with a curved blade like this for trimming the fat from beef brisket before smoking it. Not only was this blade super sharp but the handle was easy to hold and has a nice non-slip surface for keeping your grip even if you get a little grease on your hand. The curve is especially important in this type of use as opposed to a straight blade so you are not getting the sharp tipped point caught up in the fat layers you're trying to cut off. IDK what is motivating some customers to criticize the lack of sharpness with this blade but that doesn't apply to the one I got. Once the brisket had 9.5 hours of smoking and 2 hours rest I used this same knife to slice it into prox 1/4" wide strips to serve to my guests and it worked better and easier than 3 specialty meat knives that I used to use for this purpose! In subsequent days I even used it to easily and cleanly slice ripe homegrown tomatoes that are notorious for being tough to get through the skin. This went through like a chainsaw through butter! In reality, to use specifically to trim the fat on briskets this 8" blade is about 2" longer than would be ideal for that purpose but its such a high quality, super sharp steel blade that I look forward to adding it to our kitchen collection for lots of uses in the future. I'll probably go back and try to buy a 6" version of this for the fat trimming as it will be a little more appropriately sized for that. I've not owned any cutting tools from this well known, Swiss brand but I'm a believer in their high quality, now!! I recommend this to any foodie who is serious about getting good results on the cutting board with your kitchen creations. Great knife!!

Lightweight, thin blade, exceedingly sharp
This is the kind of knife that makes me think of a scary movie because it’s exceedingly sharp. I won’t be leaving this knife in plain view. I advise ordering some type of sheath or protection for it.I like that* The curved knife is lightweight. I have joint pain so weight matters.* The blade cut through a thick piece of beef like a warm knife through butter.* Thin slices of beef were cut without tearing the meat.I did not like that there is not sheath for the knife. It’s exceedingly sharp. I discussed this knife with each family member - all adults - so they are warned to take the blade sharpness seriously. I would definitely not allow this knife near any location that a child or irresponsible adult could find.Final thoughts: I have cooked many meals for several decades and this the sharpest blade I’ve ever owned. I can’t believe that the As-seen-on-TV knives get all the glory. I saw a curved blade used on a YouTube video about barbecue and liked how the “breaking knife” cut. I never heard of a breaking knife. All these decades I’ve used whatever I could find at the grocery store. I can’t believe I’ve struggled with cutting all these years when all I needed was the right knife for the job. I’ve bought expensive knives and sharpeners that did not cut nearly as well as this knife. I don’t know how people who enjoy cooking find the right tools for the right job. I never heard of a “breaking knife.” In my case, a YouTube video demonstrated how to remove a membrane from ribs before barbecuing. I’ve used plain knives and even a fork to start the process, but when I saw the curved knife, I looked on Amazon for “curved knife” and discovered that the knife had a name. This knife is thin and slides under the membrane making the process faster and less painful for my joints. I’ve never used a knife like this one before, so I have no comparison. I am satisfied with my purchase. I hope these comments were beneficial as you make your buying decision. Good Quality Sharp knife
This knife is an industry standard for butchers. It is sharp and stays that way with just a steel. I got the plastic handle that is dishwasher safe, the rosewood handle isn't.It came with a flimsy plastic sheath wrapped in a cardboard taped sheath. Not in a presentation box like many chef knife. But its sharpest knife in my draw.

Plain blade that really works well
It’s funny - this looks like a ginsu knife out of the box. Don’t let looks or price fool you, this works through meat handily. This is a functional blade, flexible and sharp. Easy to sharpen, and a fast cutter that belies its low price. Buy it for function. It’s not pretty, but it works.

No disappointment here
I have many Victoronix knives that I love and this one is no exception. It cuts so smoothly that I seem to be grabbing it more often than my others for meats.They are extremely sharp, so leave it in it's plastic sleeve when not in use.

Comfortable in hand
Very nice fit in hand, have to keep sharpening it but cuts very nicely when sharp
