Nearly cut off part of my thumb - be careful!
This product does do what it is supposed to do. However, after nearly slicing a portion of my thumb off and requiring stitches, I would encourage you to make very sure that this is the product you want and that you wear some sort of safety glove on your off hand while use slice/trim with the other hand. Also, a family member tried to wash it and also cut herself, too. Granted, that's great that it is sharp, but again, please, please, please handle with care and use this product with great caution if you choose to purchase it. I'm still giving it 3/5 stars 'cause it does do what it is supposed to do, but I can't give it more for safety concern reasons.

dont waste your money. stick to the knives that your used to
I was really hoping to like this, and actually purchased it primarily for chicken skin scraping, as I was told it worked pretty good for that; however, I quickly found out it does not AT ALL, I ripped and sliced up so many skins, I had to stop cause you can only have so many on the edge ones for a competition.So, that being said I started using it for Brisket and quickly just went back to the carving knife. The blade opening isn't wide enough, so you have to make a bunch of small slices, and on top of that it doesn't really work on the silver skin type stuff sometimes on the flat side. With my knife I can take the majority of the fat cap off with one pass, with this it takes dozens, and its also harder to gauge or control when the meat is at, and if you're cutting out some meat. Also the pulling motion is much harder on your wrist, so this is not in any way an ergonomic advantage.Another note on the chicken skin usage, there are 2 screw heads poking out where the blade attaches, and if you've ever scrapped chicken skin you know that you need to be like thinner than bible paper, so this is literally not even possible to achieve with this thing.Don't waste your money, just stick to a good old fashioned knife. This is like one of those inventions that solves a problem that never existed in the first place. I still giving it 2 stars cause it does literally cut meat like it says it will.

This will not only remove fat and skin from meat but also your finger
We smoke pork all the time and I was using this tool to remove skin off the shoulder. I slipped and also cut a chunk out of my finger. I am no longer allowed to use this tool but is is worth every penny, just be careful!.

Easy to use and reduces trimming waste!
Had my doubts but this thing really works! It is very easy to use; greatly reduced the amount of meat attached to the fat I trimmed off my brisket; left behind a smooth surface and more meat! Can't go wrong with this gadget when it reduces waste and you are dealing with rather expensive cuts. Highly recommend!

Qwick Trim Brisket Fat Trimmer
This Qwick Trim Brisket Fat Trimmer is the only trimmer you will ever need. It slides effortlessly along the side of meat, trimming just the fat that you want to trim. We were smoking a 14 LB Brisket & I needed a fat trimmer of sorts as I didn't just want to hack away at it with a knife or a filet knife which could be clumsy & cumbersome with a big cut of beef. This Qwick Trim Brisket Fat Trimmer worked great & gets a 5 ratting from me. I also order replacement blades.

Best Tool in my Brisket Trimming Tool Box
I was able to cut the amount of time in half when using this tool to trim the excess fat from Full Packer Briskets.I wish I would have had it years ago.

Makes trimming brisket a breeze
This is exactly what I didn’t know I needed. After trimming brisket all this time with a long knife my stepmom recommended this. It works for much better for me and I have a lot more control
