Are these 2.5mm pitch (jst xh spec) or 2.54 as described?

2.54 works perfectly with jst kh - that's why I bought it

Would these work in make a connector cable which replaces 3 pin 2.54mm jst ph to jr type connectors ?

It should be okay for the JR connectors which are basically Dupont, but I think the die is too thick (I measured 4.6mm) for JST-PH which according to JST's drawing has a crimp length of 2.85mm for both the insulation and conductor combined. The Iwiss SN-2549 claims to do PH and Dupont though I wish it crimped the insulation a bit narrower for Dupont.

Which kit would be better for primarily making arduino, raspberry pi, and rc hobby jumper cables? the awg 26-18 or the awg 26-20?

While I almost never use anything heavier than AWG22 for Arduino/Pi work, you might want the 1mm crimp for RC power? Per a quick Google, an 18AWG stranded copper wire can handle 3.5A while 20AWG is only 2.5A. For me, the big difference is the accuracy of the parallel jaws in the 26-18 tool. But with the 26-20 tool, you get adjustable crimping force which could be useful, too. I have both and haven't really developed a preference between them. Probably wouldn't have bought the 26-20 tool if the 26-18 had been available earlier.
