Never tested the Ph of the sauce. I can tell you it is the only sauce that has never caused me to have acid, and I have been married to an Italian for 35 years. I love this sauce.

Am not a chemist but I have GERD and IBS and this sauce is the only one my stomach does not recognize as being acidic. It's fabulous and I use it as a flavoring with everything that would normally require sauce. No problems after 2 years.
