Great Flavor and Texture To Add Variety To Diet
I used to be able to get freekeh from one of my local grocery stores, but they don't carry it any longer. One of the great benefits of eating a vegan diet is that we tend to expand our food choices and enjoy foods that we hadn't previously. I love eating a variety of intact grains and freekeh has a unique taste that really appeals to me.I looked at reviews of several brands online, and was concerned how many reviewed mentioned grit in the packages. I can happily report that the package I got did not have any grit/dirt/stones.Freekeh can come whole or "cracked." This one is cracked, or I think of this style more as slivered. The texture/size ends up working very much like a rice kernel, which makes this a great alternative to brown rice, whether your like brown rice or not. (Ie, there's nothing wrong with brown rice, but if you don't like the flavor of brown rice or you want variety, this is a great option to add to your pantry.)PRESSURE COOKING: I cook all beans and grains in an electric pressure cooker. When I cooked the freekeh directly in the inner pot of the pressure cooker, it cooked the grain just fine, except that there was a thick layer at the bottom of stuck-on brown stuff and grains. It was a lot of waste and clean up. Next I tried the pot-in-pot method and BINGO! I get perfectly cooked grains in a nice container that I can put a lid on and pop in the fridge with whatever I don't eat. And there is zero sticking or brown stuff on the bottom of the bowl.DIRECTIONS: Put the trivet that comes with the pressure cooker in the inner pot. Add water up to the bottom of the trivet. Find a 4 cup pressure-cooker safe bowl. (I love to use my 4 cup pyrex glass bowls that have lids. When the freekeh is finished cooking, it fills the bowl perfectly. Since these bowls come with a lid, it's incredibly convenient to put the left overs in the fridge.) In the 4 cup bowl: add 1 cup freekeh and a scant 1 3/4 cup water. Put the 4 cup bowl on top of the trivet. Pressure cook on high for 20 minutes, natural pressure release.I've tried the above cooking method 3 times now and it worked perfectly every time. The freekeh was so warm, fresh and yummy that I often found myself eating it with a fork directly from the bowl. Other ideas: use freekeh just like you would rice. You can put any kind of sauce on it, add it to casseroles, use it as the grain in a 'bowl', etc.CONS: I'm disappointed in the price, since I think a price this expensive should be organic at least... Because of the price and that it's not organic, this will limit how much of it I can buy/eat.

This is a great grain - I add it to soups and also cook it like rice - very tasty!

Good flavor
I cooked it with chicken broth. Cooks fast. Can be served alone with no sauce or gravy.

Looks fresh
The grain looks fresh and has a good expiration date. I could see a lot of powder thru the bag before I opened it and decided to sift it out. The last brand I purchased did not have visible powder. Not a big problem, just one more thing to do.

If you like eating bugs, buy this
The package directs you to rinse and then optionally soak the freekeh for 15 minutes. So thankful I did the optional soak, because a bunch of little black things floated to the top and at first I thought it was bits of the grain — until they started to move and try to climb out of the bowl. Yikes. Had to toss the entire package into the garbage. This is why I store all grains and flours in containers!!

The grains came in a closed air tight bag, but the grains were filthy.
