Amazing referenceand recipe book
I bought the Bocuse cookery bible and at the time of ordering Amazon thoughtfully waved this at me as well. After I had a look at the reviews and small selection of pages I though it was expensive but worth a go. This is a big big book, its a great store of information, details of technique and recipes. Don't worry about it being american the measurements are all good, not a cup in sight. I went looking for cook books that weren't the average Nigella, Hairy Bikers type (no offence to this type of book just wanted something more advanced) and this is excellent, not only does it give you the recipes but the theory, the background and the technique that professional chefs get, its easy to see why this is from a Culinary Institute. This book is one of those books that will sit on you shelf and be used again and again, my mother had a book called the Culinary Year from reader digest and this is the improved version, dare I say the professional version to that. If you want to learn about cookery and improve your skills this is an excellent resource.

Good cooking companion
Although I have a host of cookery books and I am always on the look out for books which provide theory and techniques. I was a bit sceptical at first about buying it because it was American but when I received it I was most impressed. The paper is good quality and print used is extremely clear and and easy on the eye. The book is well written throughout and is easy to understand. Measurements are in Imperial and Metric. The photography is all in colour and presented well. This is a book for the up and coming chef - it provides information on becoming a chef, nutrition, food and kitchen safety, equipment, how to saute and braise food etc. and a host of receipes supporting the techniques used. What I like is they have used the space on the page well without it looking cluttered. This would be a fabulous gift for anyone who was entering into the catering business and needed a good reference book.

A Treasure Trove of information
This is indeed a professional book!Beautifully typeset with clear text and quality photographs on ‘acid free’ paper, a good sign of quality!After the initial few pages, the book will lay flat and the pages will stay open where you want them if you need to view some fact/s and keep your messy hands off the pages!I thought that being an American production might cause some concern, but it is no problem at all. They use metric weights & volumes as well as their usual ‘cups’ system and apart from the obvious spelling differences (colour flavour, etc.) they use British names as well as theirs where necessary, e.g. Cilantro / Coriander, Canola oil / Rapeseed oil.This is a reference book that you can open at a random page and enjoy what you read. It will bring a smile to your face and you will possibly learn something into the bargain. A take-to-bed book even, although it is very heavy!Highly recommended when being sold at the discounted price.P.S. I had an issue with the way this book was packaged, but obviously, this has not influenced my rating.

not just a cook book

Good addition to my library...
this is a really interesting book for someone who wants to refine technique or learn variations on a theme (how many mirepoix can there be?) The recipes are well written and techniques explained well...but the qualities are all industrial scale...as a home cook I'm not sure there are many times I will want to cook 20 servings of curried goat or make 8lbs of basic bread dough. If you are a keen amateur and want to add to your knowledge of technique and principles, it is worth investing the money and time in this

Very useful and methodical
Loved this book because it covers pretty much everything a person needs to know about cooking, and has something for everyone - no matter whether you are completely new to cooking or looking to up your game. Very methodical, visual and overall - great investment!

Great book
The book itself is truly a masterpiece.I purchased through Bright Sky Books and they have been incredibly supportive and responsive when I had a small issue.Would recommend and go buy from them in the future.

Lo que un verdadero Chef necesita
Este libro lo compre con el vendedor: premium-libros-mexico, considero que es importante saberlo pq fue el precio mas económico que encontré y la atención es muy buena, fueron muy atentos y responsables en contestar mis mensajes, eso si tarda en llegar el pedido pero llego antes de la fecha máxima. Y para dar mi reseña lo desglosare por puntos:- EMPAQUETADO: Si se puede mirar en las imágenes que adjunte, dentro de la bolsa de la paquetería solo estaba esa tira de burbujas que protegía al libro, un libro que es de tapa dura y muy pesado puesto que tiene casi 1,300 paginas, por lo tanto o el libro se daño en el camino o ya venia dañado. Como persona que cuida demasiado los libros, me desagrado ver el libro con marcas y esa abolladura en su lomo pero nada tan grave como para regresarlo aparte de que tardo mucho en llegar y no me imagino la devolucion y la llegada de nuevo.- EL LIBRO: De verdad que este libro es sorprendente, como lo comente anteriormente son aproximadamente 1,300 paginas, de las cuales te indica paso a paso los cuchillos y utensilios para usar, para que sirven y como sacarles provecho y a su vez, lo hace con los mariscos, carnes y todas las proteínas, en si es un libro muy completo y por supuesto que el titulo lo dice todo, si quieres saber mas de la cocina, es el mejor libro que puedes adquirir y la mejor inversión que puedes hacer...aparte de unos buenos cuchillos.
