Excellent for Baguettes at a Fraction of the Cost of the Name Brand Pan
Just made my first sourdough baguettes in my new Dutch Oven, and I LOVE IT! They are shorter than the ones I made on my oven stone (11.5 " instead of 15"), but my usual recipe now makes four loaves (baked two at a time) instead of three. The pan and lid are well-made and fit together perfectly. The result: loaves with open crumb, oven spring, good ears, and great crust!If you have a gas oven, it is almost impossible to create and sustain enough steam (because the oven is vented for continued gas ignition) to keep the baguette crust malleable for rapid expansion and oven spring. I have tried boiling water in a cast iron frying pan, ice in the bottom of the oven, and covering the baguettes on an oven stone with a pre-heated baking pan, but none of these solutions worked nearly as well as this pan.Two comments: you have to manipulate a heavy preheated pan, so you need good silicon mitts or hot pads; and I found I had to bake for 2 minutes more than I am used to--13 minutes with the case iron top on and 13 minutes with the top off.And in case it's not obvious, you bake the bread in the lid (the top part in the product pictures) covered with the larger bottom part.

Well Built Quality Pan
This cast iron baking pan is not only beautiful but also boasts a sleek profile. I initially purchased the Lodge version but had to return it as it wasn't deep enough for cooking lasagna without sauce spillage, and it felt very basic. I was looking for something with a depth of at least 3 inches. While this pan doesn't quite meet the 3-inch mark, it's deeper than the Lodge version, with an inner depth of 2.5 inches compared to the Lodge's 2.25 inches. The inner length and width are 12.7 inches by 8.7 inches, similar to the Lodge version. The outer height with the cover is 3.75 inches. With the cover, it's suitable for lasagna with minimal spillage. Even if I don't use it for lasagna, I'll keep this pan. The cover's handle is ergonomically curved for a comfortable grip, and the bottom handles are straight with design grooves for secure handling. The interior texture is smooth, though not mirror-like, yet the entire surface is evenly smooth without any bumps or ridges. The pan's aesthetic appeal, quality, and well-crafted design are evident, plus the cover is versatile, serving as a Dutch oven, lasagna cover, skillet, etc. I've grown fond of this manufacturer due to the quality and design. Best purchase in years.
Perfect for meals for 2 people. I never have to use aluminum foil ever again. Plus it looks faster with that heavy lid. I love it. Chicken, ribs, etc perfection. I did good. Great product. I told everyone.

Not seasoned well at all
Used twice and seasoning came off on inside. I dried and coated with light coat of oil both times. Very disappointingUpdate- seller contacted me and made it right. I am happy the company is easy to work with. Updating my review from 1 star to 4. Thank you!

Great quality!
Very nicely made! I use a large cast iron baking sheet in my regular oven but got this primarily to use the lid in the same way, but in my Breville countertop oven. I like using cast iron to make oven fries or roasted veggies. It fits perfectly in the Breville, and I can see using the braiser to roast a chicken or some veal shanks.

Cast is best!!
This was purchased to bake my sourdough hoagie rolls, using the lid. Hoagies bake perfectly inside this vessel, delicious and soft rolls. Love the heat a cast iron can keep. Even baking, perfect!!Highly recommend!
