Q: can I get an instruction instruction?

Mine didn’t come with instructions either. It’s pretty simple though. Find what V your device requires and simply move the dial to till the screen reads that number.

Q: Would this be safe to use continuously (for approximately 5 days) for a fermenter heating pad that is is 6A 12V?

I do not see any problem. The unit can supply 12v at 10 amps. And the display shows the selected voltage. The short length of wire is used if the polarity needs to be reversed
