Q: Are the grohe 1405300m set service stops necessary for this unit to fuction optimally adn why?

The service stops are not required to make this operate. The service stops can be added so the water can be shut off at the valve to service it vs having to shut the main water supply to the home.

Q: Can this be installed upside down if supply pipes are coming from above?

Q: Can this be installed on an exterior wall in Indiana?

I have not seen anything saying this is frost resistant. I would double up the wall to be safe. Basically build a wall on the inside from the insulation for where you want this. Pipes on exterior walls are a bad idea, anywhere.
