Sure it crystalizes - which tends to prove it's real.
These days the market is full of fake honey from China, cut with corn syrup, and smuggled into the US system through 2nd or 3rd hand importers. One characteristic of the fake honey is it rarely crystalizes. Also it tastes bland. This honey tastes like it came right out of the comb. If you're not used to real honey, get ready. NOTE one month later: the honey is still delicious, but one of the plastic jars arrived with a broken lid, just like in the case of another reviewer who provided a picture. I'm not deducting a star for it like she did, but if you buy these several times, keep one or two of the old lids as spares. The lid seems to be made from a plastic which is too brittle, and is too thin, for the task.

Best to have on its own
I use other honey brands in my baking and coffee, but this is by far the best honey to have if you are eating the honey raw.We sometimes pair it with some Greek yogurt or nuts for a healthy dessert. My kids regularly have "honey on a spoon" as a quick week night dessert, and one of my kids will only eat this honey on a spoon, and any others he has tried, he doesn't like.It has a nice raw grit to it. The taste and texture both make it my favorite to eat.It reminds me of the honey fudge I used to eat from a honey factory in the city where I grew up.Sometimes it is more liquid or runny, but I've found keeping it in the fridge for at least a few days usually helps it to solidify more, which is how we like it.

A little grainy texture, but good taste
A little grainy, but good taste. A few seconds in microwave would fix texture. Good price and would buy again.

Best honey I tried in years
This honey has taste closest to real ( probably is ) from many I tried in years. Excellent taste and texture. It's crystalized but that's what I prefer anyway. Already bought it again and will continue.

Comes crystallized, flavor is a unusual
First attempt to try this was a dud. It was sent in a padded mailer and arrived with the lid snapped, bottle dented heavily, and seal compromised. A replacement was sent (again, in a padded mailer... maybe order this with other stuff so it has a chance in a box?) and arrived heavily dented but lid and seal intact. The honey is crystallized, which is fine but not my preference since it makes it hard to measure. The flavor however I'm really unsure if I like or not. It has a smokey tinge to it, and definitely has a more earthy/mushroom type flavor. Maybe there were wildfires around where it was harvested or too much smoke was used to settle the bees? I find it is fine on breads, but makes my tea taste awful. Won't be buying again.
