Do you add regular caster sugar or jam sugar?

I use granulated or caster, should be enough pectin in oranges but if you like thicker marmalade then jam sugar would work. I also use the unrefined brown type if I can get it, adds more depth to the flavour. I'm only trying to emulate my mum's wonderful marmalade but I'm too lazy to do my own oranges!

Is this suitable to be used in a bread maker on the jam setting?

Hello ! Personally I wouldn't recommend it, maybe because I'm of an older generation. Anyway, in a big pan (copper if you have one) it's a mere matter of 20 to 25 mns, and I can assure you it makes the most scrumptious marmalade. All my friends love it. Best regards

How long do the jars keep for once made?

They keep for ages. Officially up to 2 years I think but that’s just to cover their backs and will last indefinitely really if your sterilising and potting process is good. Good luck keeping it for that long though. It’s delicious and will get gobbled up in no time.
