Do the lids have a good seal where the glass meets the stainless? I'm concerned about how easy the lids are to keep clean.

Looks like the stainless cover is 1pc. and the stainless cover is folded around the edge of the glass top and bends around the edge of the glass to hold it in. So it seems pretty easy to clean except where the folded part is because the metal has a folded lip about 1/4" on the inside and you can't clean that area unless you soak it in vinegar or something.

What grade of stainless steel: 10/18, 10/8, 10/0?

This is certainly not true. 18/10 is the best stainless steel you can buy. Aluminum is a toxin as well and has scientifically been proven to cause Alzheimers disease.
