Would they hold an LP record? My 80's inspired tabe numbers will be on vinyl records. Can you slip more than a piece of paper between the two rings?

Yes! Just used them to hold 45s at my wedding with no problem. The ring is super tight though, so they may get scratched in the process.

How heavy are these? I'll be using them for a farmers market and and wondering if they will stand up to wind.

These are pretty sturdy. I used them for my wedding and was impressed by them. They are pretty impossible to tip over unless you physically push them. They physically weigh 132 grams (or about 5 ounces). The base is heavy and wide, which is what holds it down well. I think they will stand up to wind but I am not sure as it might depend on how large your sign would be (as that could act as a sail).

Will these support a 5x7 acrylic square?

That's difficult to answer, because it depends on the acrylic. The rings are very tight, made for either paper or very thin plastic cards, so if the acrylic is very thick, it would be hard to get into the rings, and if it's too thin it might make it hard for the page to stay up straight.

Are these heat resistant? We will have some crock pots with warm sauce in them. I want something I can stick directly in the sauce.

I wouldn't think of putting these in a crock pot. They are study metal, but I think they're designed to hold signs or photos. The round holders at the top are meant for something very thin, not a piece of food.
