Would that fit a bottle of wine?

The top 3 shelves will not fit a bottle of wine. You may be able remove the middle shelf and adjust the top to fit them. The lower part you could remove the shelf and wine bottles would fit.

Can you leave the top part off?

I don’t think that would be possible. The top part is an important piece that’s needed to keep the side pieces together in place for it to become a complete functional shelf.

Do i have to put the middle shelf in it? or will it be without? looking to use as a coffee bar with a keurig machine.

Forgive me… Just realize I was giving you information about the lower shelves inside the cupboard. The upper shelves are structural but you could probably do fine without one of them to leave room for your Keurig coffee maker.
