What is the physical size???

These are not "ideal" for all 5gallon water jugs! Does not fit Primo 5 gallon walmart jugs! Get a smaller size for them!

What OD tubing will work best to fit snug on the center hole? 3/8 or 5/16?

Thanks for asking. 3/8in OD tubing fits in the hole but may be a bit loose. Therefore, 7/16in OD tubing will provide a tight seal despite taking some effort to squeeze in.

does this fit a gallon carboy?

No. You will want a universal or 6.5 stopper for a one gallon jug.

What is the hole diameter in the stopper

The stoppers I received had holes approximately 3/8 inch in diameter.
