Why does the pro version have a basic milk jug whereas the cheaper express version comes with a more expensive temp control milk jug?

Yes strange but true. I manage by holding the jug in the palm of my hand. Once the temp is 60 degrees , I find it too hot and it's ready. I love my machine it's fabulous. Hope you go for it as a new temperature jug is only around 15 pounds.

The Sage® SES878 Barista Pro™ retains the water used for brewing espresso in the heating area. If water is used for steam, the excess super heated water is flushed into the drip tray so that water can be added to the thermocoil and heated to the correct temperature for the next espresso extraction.

Is the black finish gloss or matte?
