American Paddlefish is considered as a cousin to the Caspian Sevruga. Its caviar is comparable in taste, color and size to that of Caspian Sevruga caviar. The color of Paddlefish caviar ranges from light to dark steel gray with a rich silky smooth and complex flavor. Paddlefish is from the Mississippi River. Paddlefish caviar has medium-sized grains with dark to light gray colored eggs, and is derived from the Polyodon Spathula fish, which is not a sturgeon species. It is not tasty
It is uctually caviar, I was noticed that it isn’ t tasty as well known sturgeons or belugas caviars, but I thought, because of puddle fish is relatively close to them the taste could be similar or close enough to pay just a little chipper. I want to tell that it is tasted horrible, it was less salty, but more fishy, and bitter, we couldn’t eat just trued it, and throw away. I ‘ll tell you for that price ??? It is shame. I’ll better pay little more but buy real sturgeon caviar. It is horrible...🙁
