Can olive oil be used in your gluten free bread mix?

I use it all the time and some times I use Avocado oil. Do not use and oil like sunflower or grade seed. After the loaf is baked it will continue to leech out the oil. I also have found it beneficial to use coffee filters in the bottom and on the top of the loaf to soak up condensation in the container. Keeps the breath from getting soft and wet.

I buy the Pancake & Breads bag, and it has tons of recipes on the back. I use this product all the time in other regular recipes like cookies and quick breads and just leave out the salt, baking soda, baking powder since the product already had it in it. Works fine.
