Now I'm a pasta making fool!
Great product, well made and heavy (relatively)! Made great pasta from batch one, amd I have never made fresh in my life before. While people tell me I have some skills in the kitchen, I had no dream that just mixing the eggs and flour in the well method as I have seen Molto Mario and others do for years would come out so easily. Very soul gratifying combining and kneeding the ingredients by hand, and then after a 20-30 minute dough rest cooking your own handiwork.I did not experience any problems with metal shards as some have said they encountered in their first few batches. I had even bought a lot of extra eggs figuring I would burn through more cause of same, but that was not the case. Mostly made the fettucine and linguini fini cuts, but also made some torteloni (need more practice on those manuevers).I no longer will buy dry pasta unless its for a die cut like fusilli or cavatappi (my current fave), since it is so much more gratifying to make it yourself. It's simple, and not time consuming other than for the dough rest, but then you do have to boil water at some point!I have also frozen the lingini afterwards, nesting it with some cornmeal to avoid sticking. Very quick and easy a la minute prep from freezer to boiling water.I highly recommend, and will shortly get the the other 2 cutter set (KPCA) to complete this set. It will not disappoint!Updated 4/11/2007:I have to say also after making many batches of dough via the well method, it certainly is simpler to just wizz it in the Cuisinart to bring the dough together and then hand knead.Everyone raves when I make the fresh pasta, specially my daughter who loves the fettucine alfredo I turn out with just a few simple ingredients - the pasta, butter, heavy cream, and parmiggiano reggiano and a touch of fresh ground nutmeg if I can remember it.

Satisfaction4u's customer service is among the best I have ever received.The description on Amazon.com for the KitchenAid KPRA pasta cutter set said it included a linguini fini cutter. The box I received said "spaghetti" cutter. I was totally disappointed because I really, really, wanted a linguini fini NOT a spaghetti cutter. I contacted Satisfaction4u and described my problem. They went thru extraordinary means to satisfy me, but the problem was that all the new KPRA sets were only shipped with spaghetti cutters. After several emails and phone calls with Satisfaction4u, I am totally satisfied they did everything in their power to get me what I wanted. Unfortunately, KitchenAid changed what they are currently shipping/manufacturing to spaghetti cutters. However, surprisingly to me, this is not a bad thing. As long as I use thin sheets of pasta with the spaghetti cutter, it makes perfect LINGUINI FINI! This is what I want!For anyone considering the KPRA set, stop considering and order it now! It is totally fantastic! I have used several different hand crank pasta machines and extruder pasta machines. The KPRA set can be compared to driving a Ferrari vs. a skateboard! One of the most important aspects of using the dough roller with the stand mixer is you can CONCENTRATE on what is going on with your pasta dough as you roll it. When you are manually cranking (with manual machines), you lose track of what is wrong with your dough (is it too wet or too dry?). With the stand mixer powering the roller, you can quickly fix/troubleshoot whatever problem you are having with the dough. I made several batches of dough including 100% whole-wheat dough and they all rolled out and cut perfectly. My linguini fini was wonderful!I was concerned about the reviews that said the KPRA set had metal shavings and other debris contaminating them. KitchenAid must be reading the reviews because mine were absolutely perfectly clean. Just in case I was wrong, I took the time to run an entire loaf of white bread thru the set to ensure the roller and cutters were clean (a tip I read from another review). I inspected the slices of bread after passing them thru the machine and they were completely free of ANY contaminates.Also, I was concerned about the reviews stating that the cutters/roller used plastic gears. I am someone who really appreciates durability. I can unequivocally state that I believe the set to be extremely durable. At no time did the rollers ever strain or work hard to process my dough. I can see no reason why there would be any undue stress on the roller/cutter that would cause (even a plastic gear) to break or strip. The sheets rolled out progressively thinner without any strain whatsoever, as did the cutting operation. I expect the parts to serve me well for years to come. They are very well built.My only regret is that I didn't buy the KPRA set sooner. I absolutely love it and the product it produces. Satisfaction4u is a company I plan to use for years to come. I will seek them out for my future kitchen needs. They live up to their name--they satisfy the customer.

Solid piece of equipment!
I highly recommend this attachment.This attachment is very well made (Made in Italy). It attaches, detaches and cleans up easily, and most importantly, it works very well. This device only makes flat pasta so if you want rigatoni or penne, you'll be disappointed. I've made fettuccine and ravioli. After you've eaten home made semolina pasta, box pasta will never measure up. Be aware that making fettuccine is not that difficult but fresh ravioli is another story...it's quite a bit of work even with this machine. Making the filling and stuffing and sealing each ravioli is laborious. However, prior to getting this device, I used to use a hand crank machine. That's just way too much work. These rollers make the job manageable. The roller makes very consistent pasta, even when you use the thin settings.My suggestion for a good pasta recipe is :2 cups Semolina flour1 cup unbleached flour3 eggs½ teaspoon of salt6 tablespoons of water (most recipes say 3 but that just doesn't work well.)*Some recipes like the one that comes in the box with this attachment, recommend the use of oil. I have not tried that approach yet. It probably works fine too, you be the judge.** Some process advice: mix the 2 flours in the Kitchen aid bowl using the paddle beater. Mix the eggs and water together with a whisk and slowly add them to the mixer while in motion on setting 2. After the big, kind if hard dough ball forms, stop and change over to the dough hook for a couple of minutes. If you make ravioli, you'll want flexible dough or you'll get cracking. If the dough cracks or if air is captured inside during the sealing process, they are garbage as they will come apart in the boiling water.To get dough flexible enough that it doesn't crack while making the ravioli, be sure to cover the dough between the first and second rollings and not let it sit longer that 30 minutes. Here's where the oil recipes may have an advantage...also, a light coating of water will help make a good seal.I also picked up the Villaware 10-Square Ravioli Maker from Amazon. It is a metal and plastic form that helps you make 10-2.5 inch square rav's at one time. It works well but 2.5 inch rav's are a bit small. You will also have a tough time getiing a sheet of rolled pasta out of the rollers that is wide enough to cover the form as the rollers are close to the same width as the form.Good luck!

Selbstgemachter Nudelteil macht natürlich ein wenig Arbeit. Wenn's mal einfach nur schnell gehen soll, dann ist so eine Nudelmaschine sicher auch nicht die richtige Wahl. Aber wer eine Kitchenaid sein Eigen nennt und gerne kocht und vor allem gerne Pasta isst, der wird von dem Nudelvorsatz begeistert sein!Das Material ist hochwertig und schwer! Was da im Paket kommt, ist schon ein ordentlicher Klotz! Der Nudelvorsatz lässt sich sehr leicht bedienen und auch die Reinigung ist sehr schnell erledigt! Man muss sich beim Nudelteig nur genau an das Rezept halten, dann verschmutzt der Teig den Nudelvorsatz fast gar nicht! Der Mehlstaub lässt sich leicht mit dem Pinsel entfernen. Auf keinem Fall für die Reinigung Wasser verwenden!Die Handhabung geht wirklich kinderleicht! Es macht enorm viel Spaß, die Nudelplatten zu formen oder sich dann darauf Nudeln zu schneiden. Eine Lasagne aus selbstgemachtem Nudelteig oder Cannelloni (die Platten einfach schneiden und rollen) oder klassische Nudeln. Alles ist möglich und schmeckt so was von lecker!Wir sind vom Nudelvorsatz mehr als begeistert und völlig überzeugt. Ein klasse Produkt, welches auf jedem Fall eine Empfehlung wert ist. Ich möchte sogar behaupten, dass man dieses Produkt bedenkenlos kaufen kann!

Si comme moi vous avez longtemps hésité à investir dans cet accessoire, fidèle compagnon de votre robot Artisan de Kitchenaid su vous aimez les pâtes, soyez rassurés, bien que le prix semble un peu élevé, vous constaterez à réception que c'est amplement justifié. Une qualité de fabrication irréprochable, le poids ne laisse aucun doute sur la solidité des matériaux utilisés, et c'est comme on peut dire l'investissement d'une vie :)Cet ensemble d'accessoires à pâtes (laminoir, linguines et tagliatelles) est simple à utiliser. Chacun des accessoires utilise la force moteur du robot Artisan, et c'est à différentes vitesses selon le modèle de pâte choisi, que vous verrez sortir ces pâtes fraiches comme par magie ! Il sont simples à utiliser, également simples à nettoyer, mais ne devront jamais être mouillés.L'utilisation est vraiment enfantine, il faut prendre son temps, le mode d'emploi est clair et le résultat est sans surprise, parfait, voire surprenant ! Quelques recettes de pâtes vous seront proposées dans le mode d'emploi. Les ustensiles à raviolis, ou à pâtes creuses de chez kitchenaid seront les compléments parfait de cet ensemble, une fois que vous les aurez tous, vous pourrez confectionner un grand nombre de pâtes différentes.Si vous consommez régulièrement des pâtes (les fraîches confectionnées par des traiteurs, pas les sèches), alors votre achat sera rapidement amorti, seul ou en famille, vous (re)découvrirez le plaisir de cuisiner à l'italienne !

Easy and satisfying to use. Full process described below!
I have never made fresh pasta before, but did so last night, and it was unbelievably easy and satisfying with this pasta attachment!Making pasta dough turned out to be very quick (using a simple recipe from the BBC Good Food website, using 5oz / 140g 00 flour, one whole egg and one egg yolk - although there are several recipes in the instructions themselves, which I didn't read..!). I made the sauce while the pasta dough briefly rested in clingfilm in the fridge, and then it was ready to roll out.You slot the roller attachment into place on your KitchenAid stand mixer, couple of twists to screw it into place, flick it to speed 2 , and you're ready to feed the dough through it. I rolled the dough in 4 separate go's, otherwise it would get too long to handle. The next trick is to keep folding the dough and rolling it through the widest two settings to make it silky smooth and into a rectangle shape. I can see that with a hand cranked pasta roller this would be a real pain to do, and you'd most likely need someone's help to either feed the pasta dough through, or to hold the roller down and crank the handle. With the KitchenAid attachment the roller stays firmly in place, and constantly rolls automatically so you just have to drape the dough through and collect it with your other hand. I can't explain how easy this was.The next stage is to crank the rollers thinner and thinner and roll the dough through each setting. To do this you don't even have to stop the machine - you just gently pull the nob and turn it to the next position. I stopped rolling at setting 6 (of 8) to make tagliatelle which worked well. Setting 7 was a little thin (but would be perfect for ravioli).The final step is to hang onto your sheet, change the rollers (which is simple and fiddle-free) to the tagliatelle cutter. Then simply feed the sheet through one last time. Out came strands of fresh home made pasta, like magic. So satisfying to watch.I hung the pasta out to dry on the KitchenAid drier (great product) but I understand it's equally find to put it in little piles. I found the TINIEST bit of flour over the strands was useful to stop them sticking to each other. Then literally 4 minutes in boiling water, and it was ready to eat.The results were great. The pasta was tastier and chewier than either dried or the fresh stuff you can buy in supermarkets. I will definitely be doing this again, and look forward to trying different colours and flavours of dough.Looking back, I realise this review is more about the dough, but perhaps that's the beauty of the KitchenAid attachment - it works so well and easily that there's not much to say about it!Wonderful bit of kit, quality product, and so easy to make some poncey home made pasta to make you feel smug.
