Q: How does it stay in the desired shape and how flexible is it?

Bending below about 6in (150mm) radius it may crack on one surface. It is naturally flattish so it needs to be held in position, unless you are taking advantage of gravity, although I have not tried steaming it as you would with bending solid wood.

Q: what wouldc i use to fix this to a archway in my kitchen ?

I would use a good glue , but hold it in place while any glue sets with pins, removed after 24hrs or so. This does of course depend on whether the ply will shape to the archway without using excessive force.

Q: Would this 3mm ply be suitable for a curve of 23cm width

As it is sold 300 wide it would need to be cut down first. It only bends along the 1200mm axis as shown in the advert. Minimum radius is about 150mm/6ins before one surface will probably crack.

Q: Can you supply 1500x300mm

I am only a customer. I have not seen an advert for any bigger pieces - but I suspect 1200mm is as long as it might come - probably from a 2400 by 1200 sheet, but it would only flex along the 1200 axis.
