Its says 8.5oz but most reviews say 4oz. Which is correct?

This listing has variations for different volumes. The 4 oz bottles are discontinued therefore you do not see in the listings as an option.

Are the Glass Stoppers air tight? Are they snug with a gasket?

No. Not with gasket. Just cork with varying degrees of tightness.

What's the best method of cleaning the bottles? I have stuff clinging on the inside that survives a number of runs through the dishwasher.

I put pepper vinegar and mine that I gave as gifts, so I didn't wash them after the initial washing. For other narrow openings I use a very skinny brush that is intended to be used to remove dryer lint. Sometimes I wrap a paper towel around a chopstick, wooden skewer, or a piece of wire when I need it to flex, and wipe the insides of bottles with narrow openings that way.

What size cork fits these? I would like to use a higher quality cork for homemade liqueuer.

Manufacturer says a number 9 cork in a previous answer....
