The ingredients of this rennet are: A purified and standardized solution of milk clotting enzymes extracted from the fourth stomach of young milk fed calves sourced from New Zealand and/or Australia. Supplied as a liquid saline solution containing a minimum of 95% chymosin/5% n as active component. Renco Natural Calf Rennet is purified by cellulose ion exchange chromatography. The unique chromatography step in the purification of rennet ensures a sparkling clear solution with a much lower mucoprotein content than most other similar products currently available. It does not contain any deodorants or reodorants. Manufactured in New Zealand. Usage per 1 gallon of milk: Soft cheese: 1/4 tsp; Semi-Soft Cheese: 1/2 tsp; Semi-Hard Cheese: 3/4 tsp and Hard Cheese: 1 tsp. The rennet should be added to 1/4 cup of cool unchlorinated water, mixed and then added to the warmed milk. Follow your recipe for coagulation time and next steps. This product is not required to be refrigerated in shipment, only upon arrival.
