Can I change the size to small and medium? Or it comes with only one size to make grape leaves?

It does let you adjust the depth. It is amazing at how it concisely rolls your grape leaves. I use tiny to large sized leaves and it still works. Best Find especially if you have been hand rolling all these years!

Is this thing really that bad?

It's not that bad. It's hard to figure out at first but when you get it down it works alright. Check out some YouTube videos

does this work for wonton skins?

I personally do not recommend but don't take my word for it...
