Q: What is the smallest size it can dice carrots to - I'm looking for something that can dice to about 3mm cube size.

Although, I've not used this Mandoline Slicer to dice carrots, I've used it to finely slice potatoes. There are 40 different sizes you can adjust your dial at the back of it, from the lowest being 0.5 mm to 8 mm in thickness. Also, there are two green keys at the back of it, to adjust the settings for: slicing, dicing and Julienne for chips. I hope this answers your question. My advice, is to try it out on a carrot.
