Taking the chrome tails out of the equation.. does it matter what end of the valve goes to the copper .As they are slightly different inside?

Chrome tails go into a radiator or towel rail other end into 15mm chrome or copper pipe

Which is the inlet end of the valves, I've taken the tails out to fit to the radiator and now don't know which way the valves fit

Which end fits to copper and which end fits to the chrome tail.... I can't seem to find a directional arrow on the side of the valve ?

The two fittings with the threaded ends come off and they screw into the radiator then your valves go back onto them, and then your water feed into the other end
