Can this be used in a deep fryer?

There are 3 probes. The cooker probe goes t or over 500F. The other 2 are meat probes which suggest optimum temperatures for various meats and various levels of internal temp. I used it for an oven and a grill and read all 3 in the next room. Using it for a deep fryer would be overkill for the oil and hard to keep the others in the meat.

How long are the actual probes? The ambiet temp appears to be a little shorter.

The FOOD probe OAL including the grip is 6-3/4". Excluding the grip it's 4-5/8". The BARBEQUE probe OAL including the grip is 5-1/8". Excluding the grip it's 3".

Can you calibrate this?

Yes you can calibrate any thermometer. At least, you can tell if it is accurate. For this type of probe thermometer, simply put a sauce pan on the stove and boil some water. Wait until a full rolling boil and then insert probe tip into the water. If you are at sea level and unit reads 212 degrees, your unit is spot on and working fine. Simple. Use a oven mitt when doing this. Don't want to get burned.

Can you set a custom temperature?

Yes, custom temps across-the-board. You can also turn on and off the alarms. I learned this the hard way when I seriously overcooked a pork loin.
