Great easy to read, highlights the important and not all the wasted stuff you don’t need.

I ordered this book recently and was very happy with the content, clarity and excellent coverage of what is needed to complete various food service safety training courses. The illustrations make the subject easy to understand and the tips help ensure that new employees will be able to complete their training successfully. If you are a restaurant owner or manager, I highly recommend it for a study guide for new employees as well as a quick reference during operating hours. The author is a food safety consultant, instructor and HACCP auditor so the material is exactly what is needed for these related classes. I’m happy I bought it, it has been well worth the purchase price.

It gives an overview of the information. It’s not very in-depth with information such as holding times, meat temperature, warmer temperature, etc. it is good if you just need an overview.

I am gratified with my new food safety manager's book, which is teaching me the proper techniques that I will need in the restaurant industry.

This is a good book for basic commercial kitchen knowledge for general staff or anyone to know. If you are studying for the managers Servsafe exam this will help you some but not much. I would just go ahead and buy the Servsafe text book instead.
