Tamping the ground espresso is one of the most important factors to brewing the perfect shot. The ground espresso needs to be densely compacted into the portafilter in order for the hot water to be uniformly forced through the grounds with the same pressure throughout the entire portafilter. If the espresso grounds are not evenly distributed into the filter. water will find the weak spots resulting in part of the coffee being over extracted and bitter while the rest of the coffee is underextracted and weak. With firm and even tamping, the water has no other option but to flow through the coffee evenly reating the perfect espresso shot topped with rich, golden crema. HOW TO USE STEP 1 Give your portafilter a quick shake,Level the grounds in a circular motion. Be sure to remove any crumbs lingering around the edge. STEP 2 Place the portafilter in an espresso tamping stand or on a clean flat surface or tamping mat. STEP 3 Tamp with a light amount of pressure to compact the ground coffee a little. STEP 4 Let the puck rest for a moment,Now tamp the ground coffee again with around 30lbs of force. OPTIONAL: Rotate the tamper to 'polish' the shot. STEP 5 Withdraw to reveal a smooth, even and compacted puck. STEP 6 Re-attach the portalfilter to the group head.Immediately begin brewing into an espresso shot glass. Perfect. No need for more sopbisticated hand grip. It's just a tamper for coffee not a 100 kg pressure that needs special way to be held :)Even the look is good with the rest of the tools
